About Giovanni
Giovanni Castrignano, 38, graduated as a master chef from the Rome International Chef's School in 1989 and has owned and managed a number of restaurants both locally (Leichhardt, Petersham, Sefton) and overseas. He has cooked in Naples, Rome, Costa Rica, Newark and Miami, Florida (for the likes of Bruce Willis, Demi Moore and Sylvester Stallone).
His food is of authentic, traditional Italian style, all prepared fresh on the premises. Hence his favourite saying: "My food is out of the pan, not a can". Giovanni has been cooking recipes handed down from his grandfather since he was 14. His traditional tomato-based Napoli sauce is cooked slowly for eight hours and the recipe remains a secret, close to his heart.
When you come to visit us, make sure you try the Italian Prawns (just one of his signature dishes). Then, you too, will know what everyone is raving about!
** THE FESTIVAL OF THE OLIVE is a biennial event which took place at Elizabeth Farm in Parramatta last October. In recog- nition of his Italian culinary skills, Giovanni Castrignano was invited to demonstrate his skills alongside other top Sydney-city, local and regional expert chefs including Andrew Cibej (VINI), Hugh Foster (Cafe Mint), Daniel Hong (Bentley Restaurant & Bar), Hassan M'Souli (Out of Africa), Matthew Evans (food writer and author) and Michele Cranston (Marie Claire magazine).
The Restaurant
Giovanni's Trattoria opened its doors in Phillip St on March 13th, 2007, and is very quickly becoming one of the most popular restaurants in Parramatta. The restaurant is Italian-owned and run (a rarity amongst other "Italian" restaurants in Parramatta). When Giovanni leased the premises he was very limited as to what he could with the place due to an Heritage Order placed on the building. Giovanni decided that the best way to go was in the theme of a Trattoria.
Trattorias, as the name suggests, were originally places in the countryside where farmers stopped their tractors to enjoy a cheap and hearty traditional meal. Hence, Giovanni's Trattoria offers quality food at reasonable prices, and fast service. We ask you not to judge us by the facade of the restaurant, but rather by the food that Giovanni prides himself on. Remember, you can never judge a book by its cover! We also encourage you to look at Our Menu and Our Offers pages and compare them with other restaurants, to reinforce our claim that we are one of, if not, the most affordable Italian eatery in the Parramatta region.
